Half Way Through Fresh Week

I thought I would share a little update with you all about our Fresh Week progress.

We are taking part in Tefal’s Fresh Week Challenge. (If you haven’t heard about it yet, where have you been?) Basically, Tefal are encouraging people to ditch processed foods for a week, in favour of fresh produce.

I have already blogged our meal plan for the week, but thought I’d let you all know how we are doing in reality.

Monday saw me have what can only be described as an EPIC FAIL! I was set to make Baked Potatoes, and use my Tefal Fresh Express to make home made coleslaw, but I had ran out of carrots! This saw me hastily switch the menu plan around, and make two big veg-filled omelettes instead. This isn’t a meal we have eaten before, but it is definitely one for my staple list! In 30 minutes, we had a very healthy, filling tea on the table! (There were some boiled veggies on the kids’ plates too, I just didn’t do enough for myself)!

It was delicious! Syd isn’t a big egg fan, but I am amazed to say Sam ate ALL of his meal! (The first time in over a year he has cleared his plate of anything which wasn’t nuggets)!

On Tuesday, I went out and bought the stuff to make the coleslaw, so we had the baked potatoes with grated cheese, and home made coleslaw.

I am a firm believer in crispy baked potatoes. I have Tweaked Delia’s recipe to my own liking…

Preheat your oven to Gas Mark 5 (375/190).
Wash and dry your potatoes, prick the skin several times with a fork, rub in some Olive oil (a few drops per potato – it should feel slightly slippery, but not wet).
Next, rub in some crushed sea salt (only a bit)! The oil and salt draw the moisture out of the skin, and leave you with a crisp skin.
Place them on the middle shelf and they will take around 1.5-2 hours to cook – depending on the potato size!

Tonight, we had Quorn fillets (Chicken for the kids) with Butternut squash chips, brocolli and sweetcorn. Sam adored the chips! He seems to really be enjoying trying all the fresh veggies. He hates white food, so refuses potatoes, rice and pasta. He has eaten better this week than he has in Months! I didn’t manage to get a photo of tonight’s meal.

It hasn’t all been plain sailing though – I have been eating my chocolate digestives! The kids have been snacking on loads of fruit – which is normal for them. Syd is dairy and soya intolerant, so most goodies are no-no’s for our house, anyway.

All told, I am enjoying fresh week. Interestingly, Sam’s behaviour has also improved over the past two days. I think that because he is eating more, he is sleeping better, and as a result, his behaviour is improving. I will definitely be making more of the dishes we’ve had this week!
